Serves 6
Not a salad of only 2 potatoes but two types tubers really - salad potatoes and sweet potatoes. If you wish you can make this more of a main meal by adding 3 chopped hard boiled eggs
500g (1lb) salad potatoes
250-300g (8oz) sweet potato
4 tbsp gluten free mayonnaise
1 tbsp olive oil
½ tsp cumin powder
Generous handful of fresh coriander
Seasoning
Bring a pan of water to the boil and add some salt. Wash and cube the salad potatoes. Peel and cube the sweet potatoes. Place the potatoes in the pan and cook for 2 minutes, add the sweet potatoes and cook for another 3-4 minutes until both are just done. Drain and rinse. Mix the potatoes with the oil to coat and then stir in the cumin and mayonnaise. Chop the coriander and add to the salad. Serve as an accompaniment.
