This is a very quick easy salsa
I use nice ripe tomatoes if possible but any will do as long as they have a good flavour. The conversions are not exact in this recipe and do adjust the chilli to taste.
225g (8oz) tomatoes
125g (4oz) finely onion
one small chilli or a tsp chilli sauce (optional)
Tbsp balsamic vinegar
Chop all the ingredients very finely - de-seed the chili if you don’t want it too hot.
Mix together adding the balsamic vinegar.
Instant salsa for extra colour add a little chopped parsley or coriander
